CHEF ᅤSA SVENHLIN
Rock-n-roll in hell's kitchen?? That's ᅤsa in a nutshell! She arrived on Thanksgiving Eve with tattoos, fringe and a black leather vest! Not your typical first impression of a young, Swedish woman!! But her wonderful personality and creativity shined through her tuff rock-n-roll shell! Known in Salt Lake City as our Swedish Chef, ᅤsa put together one of the most delicious Swedish Christmas Smrg¥sbords I have ever tasted! ᅤsa made four different Herring Dishes, Swedish Caviar Eggs, Gravad Lax with Dill & Mustard Sauce, Cold Smoked Salmon with Horseradish Sauce, Poached Salmon with Sauce Verte, Fish & Seafood Pate, Shrimp Salad, Swedish Christmas Ham with Red Beet Salad, Roast Beef with Potato Salad, Roasted Turkey with Mimosa Salad, Country Pate with Cumberland Sauce, Jansson's Frestelse, Swedish Meatballs and loads of scrumptious desserts!!
ᅤsa was one of the most dedicated, talented and creative chefs we had during our years in the restaurant business! Our lunch guests thoroughly enjoyed all of her daily Swedish specialties! I think one of my favorites was her Fish & Seafood Burger with Dill Aioli. But by far, I loved her Swedish Country Pate!! ChiChi, our little Maltese, would always dance in the kitchen when ᅤsa would take the Swedish Christmas Ham out of the oven!!
Some of my fondest memories of ᅤsa are from her episodes in trying to get back to the USA to help us with our Smrg¥sbord. One year, ᅤsa was working on a ship, outside of Scotland, in a terrible storm. A helicopter came to pick her up from the ship. Unable to land, ᅤsa was lifted in the air, over the stormy sea, into the helicopter and flown back to Sweden where she continued her journey to Salt Lake City! Now I call that dedication!!
Don't let ᅤsa's rock-n-roll faade mistake you! She is one of the kindest, most generous people I have ever met! I adore ᅤsa and wish her a fantastic new journey as she sails out to create new tasty treats!!
