Seafood Essence -- $8.95
Whether you feel like lobster, shrimp, crab, clams, mussels or poached salmon, this blend of aromatic flavors will add a new dimension to your taste buds. Bring a 4 quart pot of water (2/3 full) to a boil. Add 2 - 3 tablespoons kimistyle Seafood Essence and 2 cups dry white wine; allow to simmer for 20 - 30 minutes. Return to a full boil before adding seafood and cook according to desired doneness, approximately 3 minutes for large shrimp. Note: sometimes I make a bouquet garni with the spice mixture by placing a couple of tablespoons of the Seafood Essence in the middle of a 6 inch by 6 inch square of cheese cloth. Bring the corners together and tie the cheesecloth, just above the spices, tightly with some cooking string. Place the bouquet garni in the boiling water and cook like above. This omits the spices from attaching themselves to the fish or seafood.
